Dolmades alias stuffed vine leaves Ingredients 250g ground beef 220g cooked rice 220g vine leaves without stems 2 tablespoons lemon juice 3 onions 2 cloves of garlic 2 tablespoons virgin olive oil Salt and pepper 2 tomatoes Method Put leaves in boiling water and let them soak for 5 minutes. Fry garlic and onion finely chopped in oil, then add meat and stir-fry. Add salt and pepper, peeled and chopped tomatoes and stew covered on a low heat for about 15 minutes. If necessary, baste with water a little. Once mixture cools a bit, mix with cooked rice. Fill leaves with the meat mixture and roll up well. Put them in a roasting pan, drizzle with oil and lemon juice mixed with a bit of water. Bake covered in a preheated oven to 150°C for about 40 minutes. Serve stuffed vine leaves hot or cold with fresh bread.
Bolognese sauce Ingredients 500g ground beef 1 onion 2 cloves of garlic 2 tablespoons oil or lard 50ml dessert red wine 300 ml tomato passata Salt and pepper Method Preheat oil or lard in a pan and fry onion and garlic finely chopped until soft (it takes about a minute). Increase heat level, add meat and stir-fry on a high heat. Separate lumps of meat by a wooden spoon and mix regularly. When meat is golden, pour wine and stir constantly until it evaporates. Add passata, salt and pepper, mix together, cover the pan and simmer on a low heat for 40 minutes. Serve Bolognese sauce along with fresh pasta sprinkled with grated cheese and fresh basil for example.
