Made from beef parts from our prime-quality and matured beef without tendons and ligaments and grounded without addition of salt, spices and preservatives. A great fit for various delicacies made from ground meat - Bolognese sauce, burgers, etc.

Ground beef

Dolmades alias stuffed vine leaves

Ingredients

  • 250g ground beef
  • 220g cooked rice
  • 220g vine leaves without stems
  • 2 tablespoons lemon juice
  • 3 onions
  • 2 cloves of garlic
  • 2 tablespoons virgin olive oil
  • Salt and pepper
  • 2 tomatoes

Method

  1. Put leaves in boiling water and let them soak for 5 minutes.
  2. Fry garlic and onion finely chopped in oil, then add meat and stir-fry. Add salt and pepper, peeled and chopped tomatoes and stew covered on a low heat for about 15 minutes. If necessary, baste with water a little.
  3. Once mixture cools a bit, mix with cooked rice.
  4. Fill leaves with the meat mixture and roll up well. Put them in a roasting pan, drizzle with oil and lemon juice mixed with a bit of water.
  5. Bake covered in a preheated oven to 150°C for about 40 minutes.
  6. Serve stuffed vine leaves hot or cold with fresh bread.

Bolognese sauce

Ingredients

  • 500g ground beef
  • 1 onion
  • 2 cloves of garlic
  • 2 tablespoons oil or lard
  • 50ml dessert red wine
  • 300 ml tomato passata
  • Salt and pepper

Method

  1. Preheat oil or lard in a pan and fry onion and garlic finely chopped until soft (it takes about a minute).
  2. Increase heat level, add meat and stir-fry on a high heat. Separate lumps of meat by a wooden spoon and mix regularly.
  3. When meat is golden, pour wine and stir constantly until it evaporates.
  4. Add passata, salt and pepper, mix together, cover the pan and simmer on a low heat for 40 minutes.
  5. Serve Bolognese sauce along with fresh pasta sprinkled with grated cheese and fresh basil for example.
