Brisket

Thanks to its rich content of fats and ligaments it is great for cooking, thanks to which it retains its juiciness, suitable for broths and soups, baking.

Beef broth

Ingredients

  • 0.5kg bone marrow
  • 0.5kg brisket
  • 1 smaller onion
  • 1 carrot
  • 1 parsley
  • ¼ celery root
  • ½ green part of leek
  • 2 bay leaves
  • A few peppercorns and allspice
  • 2l water
  • Salt

Method

  1. Firstly, put bone marrow and brisket in an oven preheated to 220°C for 15 minutes.
  2. Put washed root vegetables, the whole part of leek, onion sliced into halves, bay leaves, peppercorns and allspice in a cooking pot, add salt and pour 2 litres of water, finally add bones from the oven. Bring to boil and boil for 2 minutes, then simmer over a low heat for at least 3 hours, preferably 4.
  3. Occasionally take out foam.
  4. When finished, remove all vegetables, bone marrow, brisket and spices to gain just pure liquid.
  5. Pick meat off brisket, then put the picked meat back into broth, add new grated/sliced root vegetable, add a handful of parsley, salt and simmer again for around 30 minutes. Thereafter, it is ready to serve as broth soup.

Baked brisket with root vegetable

Ingredients

  • 1.5kg brisket
  • 2 carrots
  • A piece of celery root
  • Parsley
  • 2 onions
  • Garlic
  • Salt
  • A few peppercorns and allspice
  • Olive oil
  • 150ml dry white wine
  • Beef broth for basting

Method

  1. Preheat oven to 180°C.
  2. Salt brisket and stir-fry in a preheated pan.
  3. Fry onion chopped finely with garlic until golden, add chopped root vegetable and fry together. Then pour wine and let it reduce to half. Add spices and salt.
  4. Put half of vegetable mixture into a roasting pan, place brisket on it and sprinkle with the rest of vegetable mixture. Alternatively, baste lightly with broth.
  5. Bake covered for 2.5 hours, check occasionally and baste brisket with juice or pour a bit of broth.
  6. Remove a lid and bake at 160°C for another 25 minutes.
  7. Serve baked brisket with root vegetable along with roasted potatoes.
